How white tea is actually made
White tea is defined by what is left out. Where green tea is heat-treated and oolong is shaped and partially oxidized, white tea is simply withered and then dried — it is not rolled and not pan-fired. The fresh leaf is spread out and allowed to lose moisture slowly, undergoing only a light, natural oxidation, before a gentle drying step fixes the tea. This minimal handling is the whole point: it preserves the soft down on the buds and gives white tea its delicate, mellow, low-astringency character. Any description that mentions "kneading" or "rolling" is describing a different tea type, not white tea.
What "Gongmei" grade means
Chinese white tea is usually sorted into grades by how much bud versus leaf it contains. The finest grades are almost all downy buds; Gongmei sits further along that scale, made mainly from a bud with one or more mature leaves. The larger leaf gives Gongmei a fuller, rounder, slightly deeper flavor than the most delicate bud-only grades, along with a naturally sweet, lightly floral-honey note — and it is more economical, which is exactly why it works well as the base for an everyday ready-to-drink tea rather than a rare loose-leaf product.
